Whatever you call them: our recipes are ideal if you want to serve something nice for a barbecue evening or bring something to the festive buffet as a guest contribution or prepare a festive buffet. The recipes are “typical summer”!
The appetizers are easy to prepare
Our recipes for appetizers are easy to prepare because they taste either cold or warm, or they are very easy to store in the refrigerator. So, if you have the time, you can prepare everything and take care of the guests when they are there.
For the appetizers, you don’t need any dishes or cutlery for your guests, so that the washing up is smaller afterwards.
Just put a few small cocktail paper napkins ready and set up a trash can where your guests can dispose of their napkins themselves. This saves you work and it tastes just as good to everyone as it does with plates and cutlery! Try the following recipes:
Zucchini rolls with feta
Almost a classic on the summer starter buffet! Make sure that you use real feta and not “cheese feta type”. Feta is made from cow and goat milk – and it’s all about the taste! You need:
- 2-3 zucchini
- 1 thick slice of feta or
- 1 jar of pickled feta cubes
- Olive oil, pepper, salt, Mediterranean spices
Cut the zucchini into thin slices and fry the slices in olive oil over low heat until soft. Let them cool and season each slice with pepper, salt, and Mediterranean herbs to taste.
Then put a cube of feta (either pure or marinated) on each slice and roll the zucchini slice around the cube. Fix with a toothpick. A leaf of rocket rolled with it looks decorative and tastes delicious too.
These canapés taste good as a warm side dish to a salad, cold on every starter buffet or as a party souvenir. It takes some time to prepare, but it’s worth the effort! You need:
- 3 eggplants
- 8 cloves of garlic
- ½ green pepper
- 1 onion
- 150g flour
- 30g grated cheese
- Olive oil, pepper, salt, oregano
Chop all of the vegetables and fry them in olive oil until they are soft. Let it cool and blend it into a creamy mass. Then gradually stir in the flour and cheese. You may need a little more flour, depending on the water content of the vegetables. The mass should result in a malleable dough.
Season to taste with pepper, salt and oregano and form small cookies out of the dough, which you bake in olive oil until golden brown. If you like, you can toss the bites in breadcrumbs or grated Parmesan before frying them.
Apples with goat cheese
These snacks are also a delicious side dish to salad, but are also suitable as finger food for parties. You only need a few ingredients:
- 2 apples
- 1 roll of goat cheese
Cut the apples into approx. 1cm thick slices and cut the core out of the slices as sparingly as possible. Place a 0.5 cm thick slice of goat cheese on each apple slice and sprinkle it with fresh thyme.
Put a small dollop of honey on each slice of goat cheese and put the apple and cheese bites in the oven at around 180 ° C. After about 10 minutes, the cheese should melt but not yet run off the apple. Remove from oven and allow to cool.
Cucumber canapés with salmon
These snacks are a bit more elegant, so that they go perfectly with an invitation or a party. You can prepare them well and store them in the refrigerator. You need:
- 1 cucumber
- 200g cream cheese
- Approx. 200g smoked salmon
- 2 teaspoons of lemon juice
- Thyme, parsley, chives
Cut the cucumber (please do not peel it, so please “organic”!) Into thin slices. This works great with a vegetable slicer that you normally use to slice cabbage. Then mix the cream cheese with lemon juice and herbs and stir until creamy. Add some milk if the cream cheese is too pasty.
Cut the smoked salmon into strips, no more than as wide as the cucumber slices.
Brush each slice of cucumber with the cream cheese cream about the back of a knife and place a strip of salmon on top. Roll everything together and fix the rolls with toothpicks.
