Almond nougat

To make this soft Spanish nougat you will need the following ingredients:


  • 300 g ground almonds
  • 4 tablespoons (56 mg) of extra virgin coconut oil
  • 2 tablespoons (30 ml) of refined liquid stevia

There are two types of stevia in health food stores: clear, refined stevia, which has no taste or medicinal properties, and a darker, thicker stevia. The latter is a remedy with a strong taste that is similar to that of licorice.

For cooking, you should always use the refined version so as not to change the taste of the recipe. Pure stevia is ideal for medicinal tea. Both types are calorie-free.


This is how the recipe is prepared:

  • If the temperature of the coconut oil is below 25 ° Celsius, the oil will solidify. So you first have to warm up the oil in a double boiler or in the microwave. But do not cook it, or it will lose its nutritional value.
  • Once the oil is liquid, you can mix it with stevia.
  • Then you can add the ground almonds. Mix everything thoroughly with a spoon or use your clean hands. 
  • Then pour this mixture into a silicone mold or on a flat baking sheet.
  • Cover with a plastic sheet and let cool in the refrigerator. The coconut oil solidifies in this way.
  • The nougat is ready to serve after an hour.
