The use of radish leaves as a vegetable, for example cooked and prepared in a similar way to spinach , is not very common, but it is quite possible.
The leaves are also being used more and more in smoothies.

How are they stored?
Definitely in the refrigerator, but the green leaves should be removed so that they stay fresh longer. To keep them fresh for a long time, you can wrap the radishes in a damp cloth or store them in a bowl of water.
Airtight storage in the freezer bag is also a good idea! If the small bulbs are wrinkled or dents, they are spoiled and you can dispose of them.
The fresher the better! You will recognize particularly fresh radishes if the leaves are still crisp and strong and not already drooping limp and withered.

Radishes don’t always have to play a minor role as one of many salad ingredients. Here are a few delicious recipe ideas:

Smoothie
As mentioned before, you can also use the leaves. Not only cooked, they can also be used raw. Try it as an ingredient in a green smoothie! For this you need:
- 1 bunch of radish greens
- 1 banana
- 1 kiwi
- Water or orange juice
Peel the kiwi and banana and cut them into small pieces. Roughly chop the leaves and add them. Then add some water or orange juice to the blender and blend all of the ingredients into a creamy, green mixed drink.

Radish and cress milk mix
Smoothies usually do not contain dairy products, which is why this is a mixed milk drink. The taste is acidic and sharp and tastes wonderfully refreshing when chilled, especially in summer. You need:
- ½ bunch of radishes
- 1 pack of cress
- Juice of half a lemon
- 150ml buttermilk
Mix all the ingredients together in the blender and after the first try, decide whether you prefer to taste this drink sweet or salty.
Both taste good! If you want to sweeten, you should opt for a calorie-free sweetener, for example stevia. Otherwise, add salt to taste.
Radish cream cheese
This recipe is particularly suitable as a spread with dark rye bread, wholemeal bread or pumpernickel. You only need a few ingredients:
- 1 pack of cream cheese of your choice (e.g. grainy cream cheese)
- 1 bunch of radishes
- 1 bunch of chives
- salt
Cut the radishes into small cubes or grate them into small wedges with a vegetable grater. The smaller the slices or cubes, the better.
Then cut the chives into fine rolls and mix all the ingredients with the cream cheese.
To prevent the cheese from watering down after long periods of storage, stir in the salt just before serving.

Apple and radish salad
Even if it sounds unusual at first, apples go very well with radishes.
The cheese makes the salad particularly hearty and, served with fresh farmer’s bread, is almost a main meal in itself. You need:
- A bunch of radishes
- 1 large apple (sour)
- 1 onion
- 100g hard cheese (Gouda, Emmentaler etc.)
- ½ bunch of chives
- Pepper, salt, salad oil, lemon juice
Use a grater to cut or grate the small tubers and the apple into sticks. Coarsely grate the cheese or cut into small cubes. Chop the onion into small cubes.
Make a salad dressing from lemon juice and salad oil and season with salt and pepper. Mix the onion, apple and radish with the salad sauce and serve sprinkled with chives cut into small rolls.
